- QuesadillaS1 E8Heat olive oil in a large frying pan. Cook onion, pepper and mushrooms, until softened, about 5 minutes. Add garlic powder, horseradish, salt and pepper and cook for another 30 seconds. Set aside. On one tortilla, layer half of the cheese, roast beef and the pepper mixture. Top with the other half of the cheese and finally, the second tortilla. Return it to the frying pan and cook for one minute on each side. Enjoy!

In a large bowl, combine quinoa, peppers, artichoke hearts, spinach, olives and feta. Top with olive oil, lemon juice, Greek seasoning and fresh parsley. Stir to combine. Enjoy!

On one ‘pancake’ spread almond butter, or drizzle honey and add sliced strawberries. Sandwich with second pancake.
